The Setup

Gaggia Classic Gaggimate PRO

My workhorse machine. I've upgraded this with the Gaggimate PRO mod, which completely changes the game by adding PID temperature stability, pressure profiling, and modern smart controls to a classic boiler design.

When I want absolute control over the extraction. The manual flow control paddle lets me do precise pressure profiling on the fly, which is incredible for light roasts and tricky decafs.
